A buttery shortbread shaped like a fish, decorated with floral patterns traced in beetroot powder, for colour, not flavour. The coriander, however, is very much present: used here in a sweet context, it catches you slightly off guard at first, then settles into something floral and faintly anise-like, quite removed from its familiar role in savoury cooking.
