Gibassier is a flat Provençal bread, scented with orange blossom water and anise. This cicada-shaped version keeps the essentials: olive oil dough, unrefined cane sugar, a firm but yielding texture, closer to gingerbread than shortbread. No butter, no egg, the aromatics do all the work. Orange blossom water comes first, anise settles in behind it, quieter.
