A buckwheat shortbread, shaped like a sheep. Buckwheat flour, used at 60%, gives it its distinctive grey-brown colour and a roasted, slightly rustic cereal flavour, whole buckwheat groats pressed into the dough add a little crunch. The shape is a nod to the island of Ouessant, where the local sheep, said to be the smallest breed in the world, is a familiar presence in the landscape. Wheat gluten-free, naturally.
